This turmeric tofu salad sandwich is a hearty protein packed vegan egg salad - made with flavorful spices, homemade bread, and veggies!  A great meal prep lunch to enjoy for many meals throughout the week.

Ingredients
  

  • 1 12 ounce package tofu, I used @morinutofu extra firm silken tofu
  • 1/4 cup bell pepper
  • 1 tablespoon vegan mayo
  • 2 teaspoons relish
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon turmeric
  • Sea Salt and Black Pepper

Instructions
 

  • Add all ingredients to a bowl and mash well with a fork. Makes enough for 4 sandwiches. Spread on thick slices of homemade sourdough bread, pile on the sprouts, and enjoy!
